Lemon Refrigerator Pudding
- Cream for decoration
- 125g cup icing sugar
- 56 tbs butter
- 4 separated eggs
- 1 packet trifle sponges - cut in half and spread with lemon curd
- 1 lemon - rind grated and juice together
Step 1Sift sugar, add butter and the cream the mix, add the lemon Juice and rind, mix in.
Step 2Stir in the egg yolks, and then fold in the stiff beaten eggs whites.
Step 3Line a dish with sponges with lemon curd on the inner side.
Step 4Cover with mixture and top with layer of sponges. Place in the fridge for a minimum I hour or overnight.
Step 5Top with whipped cream when ready to serve.
