Lemon Refrigerator Pudding


  • Cream for decoration
  • 125g cup icing sugar
  • 56 tbs butter
  • 4 separated eggs
  • 1 packet trifle sponges - cut in half and spread with lemon curd
  • 1 lemon - rind grated and juice together


  • Step 1
    Sift sugar, add butter and the cream the mix, add the lemon Juice and rind, mix in.
  • Step 2
    Stir in the egg yolks, and then fold in the stiff beaten eggs whites.
  • Step 3
    Line a dish with sponges with lemon curd on the inner side.
  • Step 4
    Cover with mixture and top with layer of sponges. Place in the fridge for a minimum I hour or overnight.
  • Step 5
    Top with whipped cream when ready to serve.
